  • 4 slices of hearty bread (such as sourdough or rye)
  • 200g sliced mushrooms (preferably cremini or button mushrooms)
  • 4 slices of Swiss cheese
  • 1 tablespoon olive oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: a dash of balsamic vinegar for added flavor

Instructions

  1. Start by cleaning and slicing the mushrooms. Heat the olive oil or butter in a skillet over medium heat. Add the chopped onion and cook until translucent.
  2. Add the minced garlic and cook for another minute. Stir in the sliced mushrooms, season with salt and black pepper, and sauté until they are golden brown and tender. Add balsamic vinegar if desired.
  3. While the mushrooms are cooking, toast the bread slices until lightly golden.
  4. Lay the toasted bread on a baking sheet or oven-safe dish. Divide the sautéed mushrooms evenly over two slices of bread. Place a slice of Swiss cheese on top of each mushroom layer. Cover with the remaining bread slices.
  5. Preheat oven or broiler. Bake the sandwiches for 3-5 minutes or until the Swiss cheese melts and bubbles.
  6. Remove from the oven, garnish with chopped parsley, and serve hot with your favorite sides.
