- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Fresh lime wedges and cilantro for garnish
- Optional: shredded cheese, sour cream, or Mexican hot sauce
Instructions
- Preheat oven to 400°F (200°C). Slice chicken, peppers, and onions evenly. Mix chili powder, paprika, cumin, garlic powder, salt, and pepper in a small bowl.
- Toss the sliced chicken with 1 tablespoon of olive oil and half of the spice mixture. Let it sit while preparing vegetables.
- Spread seasoned chicken, peppers, and onions on an oiled sheet pan. Drizzle with remaining olive oil and sprinkle with the rest of the spice mixture. Toss to coat evenly.
- Bake for 20-25 minutes, tossing halfway through until chicken is cooked and vegetables are tender.
