Instructions
- In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain excess fat and season lightly with salt and pepper.
- Preheat the oven to 375°F (190°C). Spread a thin layer of enchilada sauce in a baking dish. Warm tortillas to make them pliable.
- Spoon beef onto each tortilla, sprinkle with cheese, roll them up, and place seam-side down in the dish. Cover with remaining enchilada sauce and cheese.
