Ingredients

Scale
  • 1 lb chicken breast, cut into bite-sized pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons chili paste (adjust to taste)
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 cups cooked rice (white or brown)
  • Sliced green onions for garnish

Instructions

  1. In a large bowl, combine soy sauce, chili paste, honey, and sesame oil. Add chicken pieces and marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat and stir-fry the marinated chicken with garlic and ginger for 5-7 minutes until cooked through.
  3. Add bell peppers and broccoli to the skillet and continue stir-frying for another 4-5 minutes until vegetables are tender-crisp.
  4. Prepare rice according to package instructions while cooking the chicken and vegetables.
  5. Plate rice, top with the spicy chicken mixture, and garnish with sliced green onions before serving.

Notes

  • Allow the dish to cool completely before storing in an airtight container for up to 3-4 days.
  • Can substitute chicken with tofu or shrimp for different protein options.
