Ingredients
Scale
- 1 lb Italian sausage (mild or spicy based on preference)
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 (14.5 oz) can diced tomatoes
- 6 cups chicken broth
- 1 package (9 oz) cheese tortellini
- 2 cups fresh spinach or kale, chopped
- Salt and black pepper to taste
- Optional: red pepper flakes for a spicy kick
Instructions
- Start by gathering all ingredients and prep by dicing onions, slicing carrots and celery, and mincing garlic.
- Cook the Italian sausage in a large pot over medium heat until browned and cooked through. Break apart with a spoon. Drain excess fat if needed, then set aside.
- In the same pot, sauté chopped onions, carrots, and celery until tender, about 5-7 minutes. Add garlic during the last minute.
- Pour in diced tomatoes, chicken broth, and add the cooked sausage. Season with salt, pepper, and red pepper flakes if using. Bring to a simmer.
- Add tortellini to the simmering soup and cook for 3-5 minutes until al dente. Stir in chopped greens during the last minute.
- Taste and adjust seasonings. Optionally, stir in cream or sprinkle with Parmesan cheese for extra richness.
Notes
- Use high-quality Italian sausage for the best flavor.
- Adjust spice level with red pepper flakes according to your taste.
- Add fall vegetables like butternut squash or sweet potatoes for sweetness.
- If desired, blend a small portion of the soup for a thicker consistency.
- For creamier soup, add a splash of heavy cream or milk near the end of cooking.
