Description

Start your day with this delicious Baked Feta Eggs recipe, a Mediterranean-inspired breakfast that combines creamy feta cheese and perfectly baked eggs. Perfect for a healthy, flavorful, and satisfying meal, this dish is the ideal way to enjoy a nutritious morning boost with minimal effort.

Ingredients

Scale
  • 4 large eggs
  • 200g feta cheese
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • Fresh basil or parsley for garnish
  • Salt and freshly ground black pepper to taste
  • Optional: crushed red pepper flakes for spice

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare the ingredients by slicing feta into manageable pieces and halving the cherry tomatoes.
  2. Spread cherry tomatoes evenly in a small baking dish or ovenproof skillet. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and roast in the oven for about 10 minutes until they soften.
  3. Remove from oven, evenly distribute feta over the tomatoes, and create four small wells. Crack an egg into each well, drizzle with remaining olive oil, and season with salt, pepper, and red pepper flakes if desired.
  4. Bake again for 8-10 minutes until eggs are cooked to your liking with whites set and yolks slightly runny.
  5. Garnish with fresh basil or parsley, then serve hot with crusty bread or pita for a Mediterranean breakfast experience.

Notes

  • Use high-quality feta for a richer flavor.
  • Adjust baking time based on your preferred egg doneness.
  • Experiment with spices like oregano, thyme, or additional chili flakes.
  • For added flavor, top with extra herbs or olives.
