- 3 ripe bananas, mashed
- 1 cup shredded zucchini, excess moisture squeezed out
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350Β°F (175Β°C). Grease and flour a 9Γ5 inch loaf pan.
- In a large bowl, mash the ripe bananas. Add the shredded zucchini, melted butter, sugar, eggs, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Fold in the chopped nuts, if desired.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and serve. Enjoy!
Notes
- Use very ripe bananas for the best flavor.
- Be sure to squeeze out excess moisture from the shredded zucchini to prevent soggy bread.
- Donβt overmix the batter to keep the bread tender.
