- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 packet taco seasoning
- 8 tortillas (flour or corn)
- 1 cup ricotta cheese
- 2 cups shredded cheese (cheddar, Mexican blend, or your choice)
- 1 cup salsa
- Sour cream and cilantro for serving
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onion, bell pepper, and garlic until softened. Cook ground beef until browned, drain excess fat, and stir in black beans and taco seasoning.
- In a mixing bowl, combine ricotta cheese with one cup of shredded cheese until well mixed.
- In a 9×13 inch baking dish, spread a thin layer of salsa, add two tortillas, half the meat mixture, and half the ricotta mixture. Repeat layers and finish with salsa and remaining cheese on top.
- Preheat oven to 375°F (190°C), cover with foil, and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is golden. Let rest for 10 minutes before serving.
