Easy to prepare and full of antioxidants, these bites are a guilt-free way to satisfy your sweet tooth while nourishing your body.

Ingredients

Scale
  • 1 cup fresh or frozen blueberries
  • 2 cups Greek yogurt (preferably plain or vanilla flavored)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • Silicone ice cube trays or baking molds
  • Optional toppings: crushed nuts, granola, or shredded coconut

Instructions

  1. Blend ½ cup of blueberries with honey and vanilla extract until smooth to create the blueberry swirl. Set aside some blueberries for added texture if desired.
  2. In a separate bowl, mix the remaining Greek yogurt with honey or maple syrup and vanilla extract until smooth.
  3. Pour a layer of yogurt into each compartment of the silicone ice cube tray, then add a spoonful of blueberry swirl on top.
  4. Gently swirl the blueberry mixture into the yogurt using a toothpick or skewer to create a marbled effect.
  5. Repeat until all molds are filled, then place the tray in the freezer for at least 4 hours or until the bites are frozen solid.
  6. Remove from the freezer, pop the bites out of the molds, and store in an airtight container for up to 2 weeks.

Notes

  • Use full-fat Greek yogurt for creamier and richer bites.
  • Adjust sweetness by varying honey or maple syrup quantities.
  • Mix in other fruit purees like strawberry or raspberry for variety.
  • Wrap individual bites or layer with parchment paper to prevent sticking.
  • Add toppings such as crushed nuts or shredded coconut before freezing for extra flavor and crunch.
