Ingredients
Scale
- 500g chicken thighs or breasts, cut into bite-sized pieces
- 1/4 cup soy sauce (preferably dark soy for richer flavor)
- 2 tablespoons honey or brown sugar for caramelisation
- 2 cloves garlic, minced
- 1-inch piece of fresh ginger, grated
- 4 cups chicken broth
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- Cooked jasmine or basmati rice for serving
- Optional: sliced green onions and sesame seeds for garnish
Instructions
- In a large skillet or wok, heat 1 tablespoon of sesame oil and add chicken pieces. Cook until golden brown, about 5-7 minutes.

- In a separate pot, heat remaining sesame oil. Add minced garlic and grated ginger, sauté until fragrant (about 1 minute).
- Pour in chicken broth and rice vinegar, stirring well. Bring to a gentle simmer.
- Add caramelised chicken to the broth and cook for another 5 minutes to meld flavors.
- Serve hot over steamed rice, garnished with sliced green onions and sesame seeds if desired.
Notes
- Store leftovers in airtight containers in the refrigerator for up to 3 days.
- Reheat gently on the stove or microwave, adding a splash of chicken broth to retain moisture.
- Freeze in freezer-safe containers for up to 2 months; thaw before reheating.
