Instructions
- Preheat your oven to 350°F (175°C). Grease a standard loaf pan with butter or non-stick spray and set aside.
- In a large mixing bowl, whisk together the pumpkin puree, maple syrup, vegetable oil, eggs, and vanilla extract until well combined.
- In a separate bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, ginger, cloves, cardamom, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, gently folding until just combined. Add nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan. Smooth the top, and sprinkle with cinnamon or sugar if preferred.
- Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
