Ingredients

Scale
  • 1 pound smoked sausage, sliced
  • 4 cups russet potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Optional: cooked bacon bits for extra flavor (Cheesy Bacon Potatoes)

Instructions

  1. Bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 10-12 minutes. Drain and set aside.
  2. Meanwhile, in a large skillet, heat olive oil over medium heat. Add sliced smoked sausage and cook until browned and heated through, about 5 minutes. Remove from heat.
  3. In a large bowl, combine cooked potatoes, smoked sausage, ranch seasoning mix, sour cream, and half of the shredded cheddar cheese. Stir until well coated and integrated.
  4. Transfer everything into a greased baking dish. Top with remaining cheddar cheese and sprinkle chopped green onions over the top. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until bubbly and golden.

Notes

  • You can add vegetables like bell peppers, broccoli, or spinach for extra nutrition.
  • For a different texture, try using mashed potatoes instead of cubed potatoes.
  • Use different cheeses such as pepper jack or mozzarella for varied flavors.
  • This dish can be made in a slow cooker for a hands-off approach.
