Ingredients

  • 4 cups diced potatoes
  • 1 lb smoked sausage, sliced
  • 1 medium onion, chopped
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup butter, melted
  • Salt and pepper to taste

Instructions

  1. Wash and dice the potatoes into bite-sized cubes. In a large bowl, mix potatoes with ranch seasoning and melted butter until coated.
  2. In a skillet, cook the sliced sausage and chopped onions over medium heat until browned and onions are translucent (about 5-7 minutes).
  3. Combine the sausage, onions, and ranch-seasoned potatoes in a large baking dish, mixing well.
  4. Top with shredded cheddar cheese, cover with foil, and bake at 375°F (190°C) for 30 minutes. Remove the foil and bake for another 10-15 minutes until cheese is golden and bubbly.
