- 2 cups beef broth or water
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Cook the ground beef in a large skillet over medium heat until browned, breaking it apart. Drain excess fat. Season with salt, pepper, and taco seasoning.
- Add chopped onions, bell peppers (if using), and diced tomatoes. Cook until vegetables soften. Stir in rice to coat with the mixture.
- Pour in beef broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is cooked and liquid is absorbed.
- Remove from heat. Sprinkle shredded Cheddar cheese evenly over the top. Cover and let sit for 2-3 minutes until cheese melts and gooey.
