Description

Cheesy Taco Rice Skillet is a quick and flavorful Mexican-inspired dish combining seasoned ground beef, fluffy rice, melted cheese, and zesty taco spices — perfect for easy weeknight dinners and family favorites.

Ingredients

Scale
  • 1 lb (450g) ground beef
  • 1 cup long-grain white rice
  • 1 packet Taco seasoning mix
  • 1 cup shredded Cheddar cheese
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1/4 cup chopped onions
  • 1/4 cup diced bell peppers (optional)
  • 2 cups beef broth or water
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook the ground beef in a large skillet over medium heat until browned, breaking it apart. Drain excess fat. Season with salt, pepper, and taco seasoning.
  2. Add chopped onions, bell peppers (if using), and diced tomatoes. Cook until vegetables soften. Stir in rice to coat with the mixture.
  3. Pour in beef broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is cooked and liquid is absorbed.
  4. Remove from heat. Sprinkle shredded Cheddar cheese evenly over the top. Cover and let sit for 2-3 minutes until cheese melts and gooey.

Notes

  • Add black beans or corn for extra flavor and texture.
  • Use Monterey Jack or Pepper Jack cheese for a different cheesy twist.
  • Substitute ground turkey or chicken for a healthier alternative.
  • Make it vegetarian by using sautéed mushrooms or plant-based meat crumbles.
