  • 2 cups chicken or vegetable broth
  • 1 lb ground beef (or ground turkey for a healthier option)
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup corn (fresh or canned)
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the long-grain rice and a pinch of salt, stir well, cover, and let it simmer for about 18-20 minutes until fully cooked.
