Experience the flavorful comfort of Chicken Burrito Casserole, an easy-to-make main dish packed with savory chicken, cheese, beans, and spices. Perfect for quick weeknight dinners and family gatherings, this casserole combines the classic taste of burritos with the convenience of baking into a hearty, satisfying meal.

Ingredients

Scale
  • 2 cups cooked chicken, shredded (use leftover chicken or quick-cooked chicken from slow cooker honey mustard chicken)
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup salsa or pico de gallo
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, chopped cilantro

Instructions

  1. Preheat your oven to 375°F (190°C). Gather all the ingredients, ensuring everything is ready for quick assembly and baking.
  2. In a large mixing bowl, combine the shredded cooked chicken, cooked rice, black beans, corn, salsa, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix thoroughly for an even distribution of flavors.
  3. Spread half of the mixture evenly in a greased 9×13 inch baking dish. Sprinkle with half of the shredded cheeses.
  4. Add the remaining chicken mixture on top, and sprinkle with the remaining cheese. Optionally, add crushed tortilla chips or a sprinkle of cumin for extra crunch.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden. Remove and let rest for 5 minutes before serving. Garnish with cilantro, avocado, or sour cream as desired.

Notes

  • Use leftover cooked chicken for quicker prep.
  • For extra flavor, add chopped jalapenos or hot sauce.
  • Top with crushed tortilla chips before baking for a crispy topping.
  • Reheat leftovers in the oven for best texture, about 15 minutes at 350°F.
