Description

Chili Roasted Chickpeas are a crunchy and spicy snack delight, packed with protein and fiber. Perfect for a healthy munch or as a topping on salads, these crunchy treats are easy to make and full of flavor!


Ingredients

  • 1 can (15 oz) chickpeas (garbanzo beans), rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse and drain the chickpeas thoroughly and pat them dry with a paper towel.
  2. In a large mixing bowl, combine chickpeas, olive oil, chili powder, garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
  3. Preheat the oven to 400°F (200°C), line a baking tray with parchment paper, and spread the chickpeas in a single layer.
  4. Roast the chickpeas in the oven for 25-30 minutes, shaking the tray halfway through for even crisping.
  5. Once golden brown and crunchy, remove from the oven and let cool slightly before serving.

Notes

  • Store leftover chickpeas in an airtight container at room temperature for up to 3 days.
  • For longer storage, keep them in the refrigerator but expect them to lose some crunch.
  • Re-roast in the oven for a few minutes to refresh before serving again.
