Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons chipotle sauce
  • 1 teaspoon smoked paprika
  • 1 tablespoon lime juice
  • 2 cups cooked rice (white or brown)
  • 1 cup corn (fresh or canned)
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste
  • Lime wedges, for serving

Instructions

  1. In a bowl, combine the shrimp with chipotle sauce, smoked paprika, lime juice, salt, and pepper. Let them marinate for 15-20 minutes.
  2. Heat a skillet over medium-high heat and add the marinated shrimp. Cook for 2-3 minutes on each side until pink and opaque.
  3. While the shrimp cooks, prepare the toppings: chop the avocado, halve the cherry tomatoes, and finely chop red onion and cilantro.
  4. In a serving bowl, start with cooked rice, layer the cooked shrimp on top, followed by corn, avocado, cherry tomatoes, red onion, and cilantro. Finish with a squeeze of lime juice.
