- 1 pound large shrimp, peeled and deveined
- 3 tablespoons chipotle sauce
- 1 teaspoon smoked paprika
- 1 tablespoon lime juice
- 2 cups cooked rice (white or brown)
- 1 cup corn (fresh or canned)
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
- Lime wedges, for serving
Instructions
- In a bowl, combine the shrimp with chipotle sauce, smoked paprika, lime juice, salt, and pepper. Let them marinate for 15-20 minutes.
- Heat a skillet over medium-high heat and add the marinated shrimp. Cook for 2-3 minutes on each side until pink and opaque.
- While the shrimp cooks, prepare the toppings: chop the avocado, halve the cherry tomatoes, and finely chop red onion and cilantro.
- In a serving bowl, start with cooked rice, layer the cooked shrimp on top, followed by corn, avocado, cherry tomatoes, red onion, and cilantro. Finish with a squeeze of lime juice.
Notes
- Store leftovers separately in airtight containers for up to 2 days.
- Reheat shrimp and rice before serving.
