Description

Cowboy Stew is a hearty and flavorful crockpot delight that combines smoky sausage, ground beef, and fresh vegetables for a comforting and filling meal. Perfect for busy weeknights and weekend gatherings, this customizable recipe offers a rich blend of spices and ingredients that everyone will love.

Ingredients

Scale
  • 1 lb smoked sausage, sliced
  • 1 lb ground beef
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups diced tomatoes
  • 2 cups corn kernels (fresh or frozen)
  • 2 medium potatoes, diced
  • 1 cup beef broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional: green chilies, diced for extra spice

Instructions

  1. Start by heating a large skillet over medium heat. Add the ground beef and cook until browned. Drain excess fat and transfer the beef to your slow cooker or a large pot.
  2. In the same skillet, cook the smoked sausage slices until lightly browned. Add chopped onions and garlic, cooking until fragrant and translucent. Transfer everything to your crockpot or large pot.
  3. Mix in diced tomatoes, corn, diced potatoes, beef broth, smoked paprika, cumin, salt, and pepper. Stir well to combine all ingredients.
  4. If using a crockpot, set it to low and cook for 6-8 hours, allowing the flavors to meld beautifully. For stove-top, simmer on low heat for about 1 hour, stirring occasionally. Add diced green chilies for extra spice if desired.

Notes

  • For a spicier version, increase the amount of green chilies or hot sauce.
  • You can substitute fresh vegetables with frozen counterparts for convenience.
  • Leftover stew can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
