Description

Crack Corn Casserole is a creamy, cheesy comfort food perfect for holiday gatherings, family dinners, or potlucks. Combining sweet corn, rich cream cheese, crispy bacon, and melted cheddar, this casserole is a crowd-pleaser that’s easy to make and full of flavor.

  • 2 cans of corn (drained)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup sour cream
  • 1 box Jiffy Corn Muffin Mix (optional)
  • Salt and pepper to taste
  • Optional: chopped green onions, pepper jack cheese, or herbs for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your casserole dish.
  2. In a large bowl, combine softened cream cheese, sour cream, and shredded cheddar cheese. Mix until smooth.
  3. Stir in drained corn and crumbled bacon. If desired, add Jiffy Corn Muffin Mix for fluffiness. Season with salt and pepper.
  4. Pour the mixture into the prepared casserole dish and smooth the top.
  5. Bake for 25-30 minutes until hot, bubbly, and golden around the edges. Sprinkle extra cheese during the last 5 minutes if desired.
  6. Remove from oven and let rest for 5 minutes. Garnish with chopped green onions or additional bacon crumbles before serving.

Notes
