Ingredients
Scale
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts or thighs, diced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- 8 ounces pasta (penne or rotini work well)
- 2 cups fresh spinach or kale, chopped
- Salt and pepper to taste
- Optional: grated Parmesan cheese, red pepper flakes for extra flavor
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same pot, sauté chopped onion until translucent, about 3 minutes. Add minced garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and bring to a boil. Add pasta and cook according to package instructions until al dente, stirring occasionally.
- Return cooked chicken to the pot. Stir in chopped spinach and cook for 2-3 minutes until wilted. Add heavy cream or half-and-half and stir gently to combine.
- Season with salt, pepper, and red pepper flakes if desired. Serve hot, garnished with Parmesan cheese and herbs if preferred.
Notes
- Use freshly grated Parmesan for richer flavor.
- Feel free to substitute kale or Swiss chard for spinach.
- Cook pasta separately to prevent thickening or starchiness.
- Add cooked bacon bits or mushrooms for extra protein and flavor.
