- 4 boneless, skinless chicken breasts – seasoned to perfection
- 1 cup long-grain white rice or jasmine rice
- 1 can cream of mushroom or cream of chicken soup
- 1/2 cup chicken broth or water
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley or chives (optional, for garnish)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Cook the chicken for 6-8 minutes per side until golden brown and cooked through. Remove and set aside.
- Add the rice to the same skillet. Sauté for 2-3 minutes, then add chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until rice is tender.
- In a bowl, mix the cream of mushroom or chicken soup with a splash of chicken broth. Pour this into the skillet with rice, stirring to combine. Simmer for 3-4 minutes to meld flavors and thicken.
- Slice the cooked chicken breasts and add back to the skillet. Sprinkle shredded cheese evenly over the top. Cover and cook for 5 minutes until cheese melts. Garnish with parsley or chives before serving.
