Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 8 oz of your favorite pasta (penne, fettuccine, or spaghetti)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tbsp butter
- Salt and freshly ground black pepper to taste
- Fresh parsley for garnish (optional)
- Red pepper flakes (optional for extra spice)
Instructions
- Pat the chicken breasts dry, then season generously with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken for about 6-7 minutes per side until fully cooked and golden brown. Remove from skillet, let rest for a few minutes, then slice into strips.
- In the same skillet, add 1 tablespoon of butter and a tablespoon of olive oil. Sauté the minced garlic until fragrant, about 1 minute.
- Pour in the heavy cream, stirring constantly. Gradually add the grated Parmesan cheese, stirring until smooth and thickened.
- Season the sauce with salt, pepper, and red pepper flakes if desired.
- Cook the pasta according to package instructions until al dente. Drain, reserving a little pasta water.
- Add the cooked pasta into the sauce, tossing to coat evenly. If needed, add reserved pasta water to loosen the sauce.
- Return the sliced chicken to the skillet, mixing well. Warm everything for 2-3 minutes until heated through.
- Garnish with chopped fresh parsley before serving.
Notes
- Use high-quality Parmesan for best flavor.
- Feel free to add sautéed vegetables like spinach or sun-dried tomatoes for extra flavor.
- If you prefer a lighter sauce, substitute heavy cream with half-and-half or evaporated milk.
