Description
Creamy One-Pot Broccoli Cheddar Orzo is a quick and easy pasta dish combining tender orzo, nutritious frozen broccoli, and rich cheddar cheese for a comforting and versatile meal perfect for busy weeknights.
Ingredients
Scale
- 1 cup orzo pasta
- 2 cups frozen broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup milk or heavy cream
- 2 tablespoons butter
- 2 garlic cloves, minced
- 1 small onion, finely chopped
- Salt and pepper to taste
- Optional: red pepper flakes for a spicy kick
Instructions
- Begin by bringing a large pot of salted water to a boil. Add the orzo pasta and cook until al dente. Drain and set aside.
- In the same pot, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté until fragrant and translucent, about 2-3 minutes. Stir in the frozen broccoli and cook until heated through, about 5 minutes.
- Pour in the milk or heavy cream, stirring constantly. Bring to a gentle simmer. Gradually add the shredded cheddar cheese, stirring until melted and the sauce is smooth.
- Add the cooked orzo back into the pot. Stir well to coat with the cheesy sauce and vegetables. Season with salt, pepper, and red pepper flakes if desired.
- Once heated through, transfer to serving bowls. Garnish with extra cheese or herbs if preferred. Serve hot and enjoy!
Notes
- You can substitute the cheddar cheese with other melts like Monterey Jack or Pepper Jack for different flavors.
- For a creamier texture, add an extra splash of milk or cream before serving.
- If reheating leftovers, stir in a bit of milk to loosen the sauce.
