Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast, seasoned with salt and pepper, and cook until golden brown and fully cooked, reaching an internal temperature of 165°F.
- While the chicken is cooking, bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving one cup of pasta water.
- Add the minced garlic to the cooked chicken and sauté until fragrant. Incorporate the spinach and cook just until wilted. Stir in the ricotta cheese and half of the reserved pasta water to create a creamy sauce.
- Toss the cooked pasta with the creamy chicken and ricotta mixture. Adjust the consistency with more reserved pasta water if needed. Garnish with grated Parmesan and fresh parsley before serving.
