- 4 Chicken thighs or breasts, skin-on
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil for cooking
- For the sauce:
- 1/4 cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1/4 cup water
- For the vegetable fried rice:
- 4 cups cooked rice (preferably day-old)
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (bell peppers, peas, carrots, broccoli)
- 2 eggs, beaten
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Marinate the chicken with salt, pepper, garlic powder, onion powder, and soy sauce for at least 30 minutes.
- In a large skillet, heat 2 tablespoons of oil over medium-high heat and stir-fry the mixed vegetables until tender.
- Push the vegetables to the side, scramble the eggs, and then mix in the day-old rice. Season with salt and pepper.
- In a separate pan, cook the marinated chicken until crispy and golden brown. Prepare the sauce and pour it over the chicken, simmering until thickened.
