    • 4 Chicken thighs or breasts, skin-on
    • Salt and pepper to taste
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 tablespoon soy sauce
    • 1 tablespoon vegetable oil for cooking
  • For the sauce:
    • 1/4 cup soy sauce
    • 2 tablespoons honey or brown sugar
    • 1 tablespoon rice vinegar
    • 1 tablespoon cornstarch
    • 1/4 cup water
  • For the vegetable fried rice:
    • 4 cups cooked rice (preferably day-old)
    • 2 tablespoons vegetable oil
    • 1 cup mixed vegetables (bell peppers, peas, carrots, broccoli)
    • 2 eggs, beaten
    • 2 green onions, chopped
    • Salt and pepper to taste

Instructions

  1. Marinate the chicken with salt, pepper, garlic powder, onion powder, and soy sauce for at least 30 minutes.
  2. In a large skillet, heat 2 tablespoons of oil over medium-high heat and stir-fry the mixed vegetables until tender.
  3. Push the vegetables to the side, scramble the eggs, and then mix in the day-old rice. Season with salt and pepper.
  4. In a separate pan, cook the marinated chicken until crispy and golden brown. Prepare the sauce and pour it over the chicken, simmering until thickened.
