Instructions
- Grate the zucchinis and squeeze out excess moisture using a kitchen towel.
- In a bowl, combine grated zucchini, flour, eggs, Parmesan, garlic, salt, pepper, red pepper flakes, and parsley to form a thick batter.
- Heat vegetable oil in a skillet over medium heat. Scoop spoonfuls of the mixture into the skillet and fry for 3-4 minutes per side until golden brown.
- Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce.
