Instructions
- Place chicken breasts or thighs in the Crock Pot with 1 tablespoon of olive oil, salt, pepper, and Italian seasoning. Cover and cook on low for 6-7 hours or on high for 3-4 hours until tender.
- Remove cooked chicken and shred with two forks. Return shredded chicken to the slow cooker.
- Add diced tomatoes, chicken broth, diced onions, garlic, and Italian seasoning. Cover and cook on low for 30 minutes.
- Pour in heavy cream and grated Parmesan cheese. Mix well and cook on low for 15 minutes until creamy.
- Taste and adjust salt and pepper. Garnish with fresh basil and additional Parmesan before serving hot.
