  • 1 can (14 oz) diced tomatoes with basil, oregano, and garlic

Instructions

  1. Place chicken breasts or thighs in the Crock Pot with 1 tablespoon of olive oil, salt, pepper, and Italian seasoning. Cover and cook on low for 6-7 hours or on high for 3-4 hours until tender.
  2. Remove cooked chicken and shred with two forks. Return shredded chicken to the slow cooker.
  3. Add diced tomatoes, chicken broth, diced onions, garlic, and Italian seasoning. Cover and cook on low for 30 minutes.
  4. Pour in heavy cream and grated Parmesan cheese. Mix well and cook on low for 15 minutes until creamy.
