  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)

  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef or Italian sausage in a skillet over medium heat until fully cooked. Add diced onions and minced garlic; cook until fragrant and translucent. Drain excess fat and transfer to the slow cooker.
  2. Add crushed tomatoes, broth, dried basil, oregano, red pepper flakes, salt, and pepper to the slow cooker. Stir well, cover, and cook on low for 6-8 hours or high for 3-4 hours.
  3. About 30 minutes before serving, add broken lasagna noodles to the crockpot. Cover and cook until noodles are tender, about 20-30 minutes.
  4. Stir in shredded ricotta and mozzarella cheeses and allow to melt into the soup. Garnish with chopped fresh basil or parsley before serving.
