  • 1 ½ cups white beans (canned or cooked)
  • 1 cup chopped onion
  • 1 cup chopped green chilies
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • 4 cups chicken broth
  • 8 oz cream cheese, softened
  • ½ cup shredded Monterey Jack or cheddar cheese (optional)

Instructions

  1. Gather all ingredients and prepare, rinsing white beans and seasoning chicken breasts with salt and pepper.
  2. Place chicken breasts in a crockpot and pour chicken broth over them. Cover and cook on low for 4-6 hours until tender.
  3. Remove chicken, shred it with two forks, then return to the slow cooker.
  4. Add white beans, chopped onion, green chilies, garlic, cumin, chili powder, and smoked paprika. Stir, cover, and cook on low for another 1-2 hours.
  5. During the last 30 minutes, stir in softened cream cheese until melted and smooth. If desired, sprinkle with shredded cheese and cook until melted.
