- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 tsp red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Cook the pasta according to package instructions until al dente, then drain and set aside. Wash and chop spinach, halve cherry tomatoes, and mince garlic.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sautรฉ for about 30 seconds until fragrant. Add cherry tomatoes and red pepper flakes, cook for 2-3 minutes until they soften.
- Stir in chopped spinach and cook for another 2 minutes until wilted. Season with salt and black pepper to taste.
- Add cooked pasta to the skillet, toss to coat with the tomato and spinach mixture. Top with grated Parmesan and fresh basil leaves. Serve immediately.
