  • 12 oz (340 g) of your favorite pasta (spaghetti, penne, or fusilli)
  • 2 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside. Wash and chop spinach, halve cherry tomatoes, and mince garlic.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sautรฉ for about 30 seconds until fragrant. Add cherry tomatoes and red pepper flakes, cook for 2-3 minutes until they soften.
  3. Stir in chopped spinach and cook for another 2 minutes until wilted. Season with salt and black pepper to taste.
