Easy Cheesy Ground Beef Enchiladas: A Satisfyingly Cheesy Mexican Treat! These enchiladas are filled with spiced ground beef and topped with gooey cheese, making them the perfect dish for family dinners and gatherings.

- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 8 small corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 can enchilada sauce (15 oz)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet over medium heat, sauté diced onion and minced garlic until fragrant. Add ground beef, breaking it apart as it cooks. Season with chili powder, cumin, salt, and pepper. Cook until beef is browned, about 6-8 minutes.
- In a blender, combine enchilada sauce and any leftover beef mixture. Blend until smooth and pour half of this sauce into a baking dish.
- Warm tortillas briefly to soften them. Place a spoonful of beef mixture on each tortilla, sprinkle cheese, and roll tightly. Arrange them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over enchiladas and top with cheese. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until cheese is bubbly and golden.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freeze enchiladas for up to 3 months, reheat before serving.
- Feel free to add jalapeños for an extra kick!
