- 4 cups (960ml) beef or chicken broth
- 1 can (14 oz) diced tomatoes
- 1 cup (100g) broken lasagna noodles
- 4 oz (120g) cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Fresh basil or parsley for garnish
- Salt and pepper to taste
Instructions
- In a large pot or slow cooker, heat 2 tablespoons of olive oil over medium heat. Add diced onion and minced garlic, cooking until fragrant. Add ground beef or Italian sausage, season with salt and pepper, and cook until browned. Drain excess fat if needed.
- Pour in 4 cups of beef or chicken broth and add the can of diced tomatoes (with juices). Stir well and bring to a simmer, letting flavors meld for about 10 minutes.
- Add the broken lasagna noodles to the soup and cook until al dente, about 8-10 minutes. During the last few minutes, add the softened cream cheese, stirring constantly until fully melted and incorporated.
