Description

Ingredients

  • 2 pounds of potatoes, peeled and cubed
  • 4 tablespoons of unsalted butter
  • 1/2 cup of heavy cream
  • 2 egg yolks
  • Salt, to taste
  • Ground black pepper, to taste
  • 1/4 teaspoon of nutmeg (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. Drain the potatoes, return to pot, and mash with butter and cream until smooth.
  3. Fold in egg yolks, salt, pepper, and nutmeg until combined.
  4. Preheat the oven to 400°F (200°C) and pipe potato mixture onto a baking tray.
  5. Bake for 20-25 minutes until tops are golden brown.
