- 2 pounds of potatoes (Russet or Yukon Gold)
- 4 tablespoons of unsalted butter
- 1/2 cup of heavy cream
- Salt and pepper, to taste
- 2 large egg yolks
- 1/2 cup of grated Parmesan cheese (optional)
Instructions
- Peel and cut the potatoes into equal-sized chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and pepper. Mash until creamy and smooth. Incorporate egg yolks and mix well. Add Parmesan cheese if desired.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Using a piping bag fitted with a star tip, pipe the potato mixture into decorative shapes.
- Sprinkle tops with extra cheese if desired. Bake for about 20-25 minutes until golden brown and crisp on top.
