Ingredients

Scale
  • 1 pound ground beef (or ground turkey for a leaner version)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups diced tomatoes (canned or fresh)
  • 1 cup diced bell peppers (any color)
  • 2 medium carrots, chopped
  • 2 tablespoons smoked paprika
  • 1 teaspoon ground cumin
  • 4 cups beef or vegetable broth
  • 1 cup cooked pasta or rice (optional, for added heartiness)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat a tablespoon of oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat, then add diced onions and minced garlic. Sauté until fragrant and translucent.
  2. Stir in smoked paprika, ground cumin, salt, and pepper. Add diced bell peppers and carrots, then cook for another 5 minutes.
  3. Add diced tomatoes and pour in the beef or vegetable broth. Bring to a boil, then reduce heat and simmer uncovered for 20-25 minutes.
  4. Optional: Stir in cooked pasta or rice during the last 5 minutes of simmering for extra heartiness.
  5. Serve hot, garnished with chopped fresh parsley and a side of crusty bread or garlic bread. Squeeze fresh lemon over each bowl if desired.

Notes

  • Use lean ground turkey or chicken for a healthier version.
  • Add a splash of hot sauce or spicy peppers for a spicy kick.
  • Include beans or potatoes to enrich the texture and nutrition.
  • Best served with crusty bread or a simple green salad.
