- 3 tbsp olive oil
- Juice of 1 lemon
- 2 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, sliced
- 1 cup spinach leaves

Instructions
- In a bowl, combine the diced chicken breast, olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper. Mix well and let it marinate for at least 30 minutes.

- To assemble, divide the quinoa and veggie mixture into bowls. Top with the cooked chicken and a generous dollop of tzatziki sauce. Serve immediately.
Notes
- These bowls can be stored in an airtight container in the refrigerator for up to 3 days. For best results, keep the tzatziki sauce separate until ready to serve.
- Feel free to customize the toppings with feta cheese or olives for added flavor.
- This recipe is perfect for meal prep—prepare the components in advance and assemble just before eating.
