Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup fresh lemon juice
  • Zest of 2 lemons
  • 1 teaspoon vanilla extract
  • Optional: fresh berries and whipped cream for topping

Instructions

  1. In a mixing bowl, combine graham cracker crumbs and sugar. Add melted butter and stir until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 10 minutes to set the crust.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well. Add eggs one at a time, mixing after each addition. Incorporate sour cream, lemon juice, lemon zest, and vanilla extract until smooth. Pour over the baked crust.
  3. Place the springform pan in a larger baking dish filled with hot water for a water bath. Bake at 325°F (160°C) for 55-60 minutes, until the center is almost set but slightly jiggly. Turn off oven and let the cake cool inside for 1 hour. Refrigerate for at least 4 hours or overnight before serving.
  4. Before serving, top with fresh berries, whipped cream, or lemon glaze. Decorate as desired with edible flowers or lemon slices.

Notes

  • Use gluten-free graham cracker crumbs for a gluten-free version.
