- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and dried oregano. Sear until golden brown about 4-5 minutes per side, then remove and set aside.
- In the same pan, add more olive oil if needed. Sautรฉ garlic, diced red bell pepper, zucchini, and cherry tomatoes until tender, about 5 minutes.
- Stir in the orzo, toast for 1 minute, then add 2 cups chicken broth and balsamic vinegar. Bring to a boil.
- Return chicken to the pan, placing it on top of the orzo mixture. Cover and simmer on low for 15โ20 minutes until orzo is tender and chicken is cooked through. Add more broth if necessary.
- Remove from heat, slice the chicken, garnish with fresh basil, and drizzle with additional balsamic glaze. Serve hot, optionally with crusty bread or roasted vegetables.
