  • 2 packs of dried ramen noodles
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Green onions for garnish
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of water and cook the ramen noodles according to package instructions (about 3-4 minutes).
  2. In a skillet, heat oil over medium heat and sauté mixed vegetables for 5-6 minutes until tender; add garlic and ginger.
  3. Mix soy sauce and sesame oil in a small bowl, then pour over the sautéed vegetables, stirring for 2-3 minutes.
  4. Drain the noodles and mix them with the vegetables and sauce in the skillet; adjust seasoning with salt and pepper, and serve garnished with green onions.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat with a splash of water to prevent noodles from drying out.
