  • 20 large pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • 2 cups marinara sauce
  • Salt and pepper to taste

Instructions

  1. Cook the pasta shells in salted boiling water for 9-11 minutes until al dente, then drain and set aside to cool.
  2. In a mixing bowl, combine ricotta cheese, chopped spinach, egg, garlic powder, onion powder, and dried Italian herbs. Season with salt and pepper.
  3. Preheat oven to 375Β°F (190Β°C). Stuff each cooled pasta shell with the ricotta and spinach mixture and arrange in a baking dish. Pour marinara sauce over the top.
  4. Sprinkle mozzarella cheese on top, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Unbaked stuffed shells can be frozen for later use. Bake from frozen at 375Β°F (190Β°C) for about 40-45 minutes.
  • Serve with a side salad or garlic bread for a complete meal. Pair with white wine for extra delight.
