Description

  • 4 large bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C). Wash the bell peppers, slice the tops off, and remove the seeds and membranes.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until fragrant. Add ground meat, breaking it up until browned. Stir in rice, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5-7 minutes.
  3. Spoon the filling into each bell pepper, packing it down gently. Place the stuffed peppers in a baking dish and top with cheese.
  4. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes or until the cheese is melted and bubbly. Let cool before serving.
