Ingredients

Scale
  • 1 pound ground beef or ground turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups gluten free chicken or vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup gluten free lasagna noodles or alternative pasta
  • 2 cups chopped spinach or kale
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Optional: dairy-free cheese or nutritional yeast for topping

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the diced onion and minced garlic, sauté until translucent. Add the ground meat and cook until browned. Season with salt, pepper, oregano, and basil.
  2. Pour in the broth and diced tomatoes with juice. Bring to a boil, then reduce heat and simmer for 15-20 minutes. Add spinach or kale in the last 5 minutes.
  3. While the soup simmers, cook the gluten free pasta according to package instructions. Drain and set aside.
  4. Add cooked pasta to the soup, stir well, and simmer for an additional 5 minutes. Top with dairy-free cheese or nutritional yeast if desired before serving.

Notes

  • Use gluten free pasta varieties like chickpea or lentil-based noodles for added protein and flavor.
  • If you prefer a vegetarian version, substitute the ground meat with lentils or hearty vegetables such as zucchini or mushrooms.
  • For a richer flavor, consider adding a splash of balsamic vinegar or a pinch of red pepper flakes.
