- 1 pound ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 cup fresh cilantro, chopped
- 8 corn tortillas
- 2 cups red enchilada sauce
- 1 ½ cups shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, add the ground beef with chopped onions and minced garlic. Sauté until browned and onions are translucent.
- Sprinkle in ground cumin, chili powder, salt, and pepper. Add chopped cilantro and mix well. Let simmer to meld flavors.
- Preheat oven to 350°F (175°C). Fill each tortilla with the beef mixture, sprinkle with cheese, and roll tightly. Place seam side down in a baking dish.
- Pour enchilada sauce over the enchiladas and top with remaining cheese. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until bubbly and golden.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Assemble enchiladas ahead of time and refrigerate for up to 24 hours before baking.
- For a lighter version, use low-fat cheese and serve with a side salad.
