- 1 lb chicken breast, diced

- 1 cup broccoli florets

- 1 cup low-fat cheese, shredded
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add the diced chicken breast and season with garlic powder, paprika, salt, and pepper. Sauté until cooked through and slightly golden brown.
- In a large mixing bowl, combine cauliflower rice, chopped bell pepper, broccoli florets, and the sautéed onions and garlic. Pour in the chicken broth and mix until well combined.
- In a greased glass baking dish, layer the sautéed chicken on the bottom, followed by the vegetable mixture. Continue layering until all ingredients are used.
- Sprinkle shredded cheese evenly over the top of the casserole. Bake in the preheated oven for 25 to 30 minutes or until the cheese is melted and bubbly.
