  • 2 cups cauliflower rice
  • 1 lb chicken breast, diced
  • 1 bell pepper, chopped
  • 1 cup broccoli florets
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup low-fat cheese, shredded
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add the diced chicken breast and season with garlic powder, paprika, salt, and pepper. Sauté until cooked through and slightly golden brown.
  2. In a large mixing bowl, combine cauliflower rice, chopped bell pepper, broccoli florets, and the sautéed onions and garlic. Pour in the chicken broth and mix until well combined.
  3. In a greased glass baking dish, layer the sautéed chicken on the bottom, followed by the vegetable mixture. Continue layering until all ingredients are used.
