Instructions
- Begin by dicing the onion and mincing the garlic. Chop the cauliflower into small florets for quicker cooking and better blending.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then, add the garlic and cook for another minute until fragrant.
- Add the chopped cauliflower to the pot, stirring to coat with the aromatic mixture. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for about 15 minutes or until the cauliflower is tender.
- Using an immersion blender or transferring the soup to a blender, puree until smooth and creamy. Return the soup to the pot if needed, then stir in the coconut milk, smoked paprika, dried thyme, salt, and pepper.
- Allow the soup to simmer for another 5 minutes to meld the flavors. If desired, add a splash of lemon juice to enhance the brightness of flavors.
