Description

A nourishing and flavorful Healthy Mediterranean Cauliflower Soup, perfect for summer meals. This low-calorie, vegan-friendly, gluten-free soup combines fresh cauliflower with Mediterranean spices and coconut milk for a hearty and wholesome dish that supports your healthy eating goals. Ideal for light dinners and packed with vitamins, fiber, and antioxidants.

Ingredients

Scale
  • 1 large head of cauliflower, chopped
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk (or almond milk for vegan option)
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Lemon juice (optional, for added flavor)

Instructions

  1. Begin by dicing the onion and mincing the garlic. Chop the cauliflower into small florets for quicker cooking and better blending.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then, add the garlic and cook for another minute until fragrant.
  3. Add the chopped cauliflower to the pot, stirring to coat with the aromatic mixture. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for about 15 minutes or until the cauliflower is tender.
  4. Using an immersion blender or transferring the soup to a blender, puree until smooth and creamy. Return the soup to the pot if needed, then stir in the coconut milk, smoked paprika, dried thyme, salt, and pepper.
  5. Allow the soup to simmer for another 5 minutes to meld the flavors. If desired, add a splash of lemon juice to enhance the brightness of flavors.
  6. Pour into bowls, garnish with fresh parsley, and serve hot.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • Adjust the seasoning to taste, adding more salt or spices as desired.
  • This soup can be stored in an airtight container in the refrigerator for up to 3 days.
