  • 1 pound ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) of cannellini beans, drained and rinsed
  • 1 cup heavy cream or half-and-half
  • 8 oz. lasagna noodles, broken into smaller pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh basil or parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the diced onion and cook until translucent. Add the ground beef or Italian sausage and cook until browned and crumbly. Stir in garlic and cook for another minute. Season with salt and pepper.
  2. Pour in chicken broth and bring to a boil. Add drained cannellini beans, stirring to combine. Reduce heat and simmer for 10 minutes.
  3. Add the broken lasagna noodles into the soup and cook for 8-10 minutes until tender but not overcooked.
  4. Reduce heat to low and stir in heavy cream or half-and-half. Add shredded mozzarella and Parmesan, stirring until melted and smooth.
  5. Taste and adjust seasonings. Serve hot, garnished with fresh basil or parsley, and optional Parmesan cheese.
