Description

  • ¼ cup vegetable oil

  • ½ cup boiling water
  • 1 cup vanilla custard (store-bought or homemade)
  • 1 cup chocolate ganache for frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the egg, milk, oil, and vanilla extract to the dry ingredients, mixing until smooth. Gradually stir in the boiling water.
  4. Fill each cupcake liner 2/3 full with batter and bake for 18-20 minutes, or until a toothpick comes out clean.
  5. Allow cupcakes to cool completely before filling with vanilla custard using a pastry bag.
  6. Pour chocolate ganache over the filled cupcakes allowing it to cascade down the sides.
