- 1 lb chicken breast, diced
- 4 cloves garlic, minced

- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons olive oil (for frying)
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Prepare all ingredients by dicing chicken and washing vegetables.
- In a skillet, heat 1 tablespoon of olive oil and sauté the chicken with salt and pepper until golden, about 6-7 minutes. Remove and set aside.
- Add another tablespoon of olive oil to the skillet. Sauté minced garlic until fragrant, then add mixed vegetables and cooked rice, heating through. Return the chicken to the skillet.
- Add soy sauce and sesame oil, tossing to combine. Cook for another 2-3 minutes. Garnish with green onions and cilantro, serving with lime wedges.
