Description

Hobo Casserole with Ground Beef & Potatoes is a hearty and comforting one-pot meal that’s perfect for busy weeknights. Packed with flavorful ground beef, tender potatoes, and aromatic spices, this casserole is a crowd-pleaser for family gatherings and potlucks.


Ingredients

  • 2 pounds ground beef
  • 4 large potatoes, sliced
  • 1 medium onion, chopped
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 cup shredded cheese (optional)

Instructions

  1. Heat a large skillet over medium heat and cook the ground beef and onions until browned.
  2. Stir in Worcestershire sauce, diced tomatoes, garlic powder, thyme, salt, and pepper.
  3. In a large bowl, layer sliced potatoes with the beef mixture.
  4. In a greased baking dish, layer the beef and potato mixture and pour cream of mushroom soup on top.
  5. If desired, sprinkle shredded cheese on top, cover with foil.
  6. Preheat the oven to 350°F (175°C) and bake for about 1 hour.
  7. Remove the foil for the last 15 minutes for a crispy top.
